Carlos Escalante was born and raised in Bucaramanga, Colombia. After finishing his degree in business administration in 2000, Carlos moved from Colombia to Ohio, always with the hope of owning his own business. After spending a year in Ohio, working in auto manufacturing, Carlos was offered a position in Chicago and made the move here. For 6 years, Carlos managed an auto parts factory, continuing to focus on how to own a business.
In 2007, Carlos and his wife Eve began making empanadas at home and sharing them with friends and family. After receiving rave reviews, Carlos decided to take the leap of faith and open a business selling empanadas. Carlos and Eve found a small storefront on Clark Street in Lincoln Park and signed the lease. Lito’s Empanadas opened for business in December 2007.
Lito’s Empanadas’ menu consists of ten varieties of empanadas, ranging from the more typical beef, chicken, and spinach and cheese, to more original tastes such as vegetarian, BBQ chicken and chocolate banana. The empanadas are made daily, guaranteeing freshness.
